I’ve been seeing a few variations of cheesecake salads on Pinterest for the past few months, and I couldn’t resist but my make own version of the salad. And since it’s got fruit and salad in the title, this Strawberry Kiwi Cheesecake Salad MUST be considered healthy right?

Most of the cheesecake salads I’ve seen on Pinterest feature strawberries, pineapple, blueberries and blackberries. And they all look so epically delicious!!!

However, I decided to use kiwi, strawberries and bananas, because of all the pretty colors. And also, because my toddler loves kiwi, so I knew this would be a hit with her. And it was! 🙂

So let’s talk about how easy it is to make this Strawberry Kiwi Cheesecake Salad:

1.) Start by slicing the fruit. I used strawberries, kiwi and bananas.

2.) In a medium sized bowl, beat together the cream cheese, cool whip and sugar until smooth. Be sure to use room temperature cream cheese as it beats smoothly. Also, if you can’t find cool whip you can substitute it with either dream whip, freshly whipped cream or even vanilla flavored yogurt!

3.) If you’re taking this Strawberry Kiwi Cheesecake Salad to a pot luck or gathering, then I would suggest that you fold in the fruit just before you take it. This salad is best served on the day it is made, as otherwise it becomes soupy the next day or so. And seriously, it tastes SO good, I really doubt you will have any leftovers!
